This weekend I made a new recipe!
Pineapple Cheesecake Homemade Ice Cream
I got the idea from a raspberry cheesecake ice cream recipe I found here.
I had some canned pineapple left over from a stir fry recipe, so instead of making a smoothie with the leftover fruit, I experimented and made some yummy ice cream.
Note: I pureed only pineapple fruit, not any juice from the can.
8oz cream cheese, softened to room temperature
1 and 1/2 cups sugar
2 and 1/4 cups pureed pineapple
1 and 1/2 cups whole milk
1 and 1/2 cups heavy whipping cream
Whisk cream cheese until smooth, and then add sugar. Whisk until combined.
Next, whisk in pineapple puree. Finally, whisk in the heavy whipping cream and milk.
Add the mixture to your ice cream maker. Makes about 2 quarts.
My husband loved it.
So did my in-laws - score!
